Timing and Advance Preparation
Mole verde can be prepared in about 1½ hours, half of which is devoted to unattended simmering. It may be completed through Step 4 a day ahead; store the sauce and chicken separately, covered and refrigerated. If necessary, thin before completing Step 5.
TRADITIONAL VARIATIONS
Simple Chicken Breasts in Tomatillo Sauce: For a quick, traditional-tasting main course, poach the chicken (Step 1), then prepare 2½ cups (1 recipe) Quick-Cooked Tomatillo Sauce using the chicken broth. Reheat the chicken in the sauce and serve garnished with onion rings and fresh coriander.
